Estoy convencido de que AlzheimUr brindó a los alumnos
de nuestra Escuela de Hostelería la oportunidad de participar
en una experiencia que recordarán a lo largo de toda su vida.
No sólo por el enriquecimiento profesional que les aportó
ese tiempo compartido entre obradores con el maestro
pastelero Paco Torreblanca, ejemplo de buen hacer y de
calidad humana; sino, sobre todo, por el enriquecimiento
personal que supuso para ellos participar en un proyecto
profundamente social y solidario.
Decía el magistrado y gastrónomo francés Brillan Savarin
que “el placer de la mesa pertenece a todas las edades, a
todas las condiciones, a todos los países y a todos los días
y es el último que nos queda, después de haber perdido todos
los demás”. Añadiría a sus palabras que además la cocina
puede ser también el último vínculo con una realidad que,
en el caso de estos pacientes, se les escapa de las manos al
ritmo acompasado del olvido.
Por eso nos pareció tan interesante poder contribuir a este
proyecto que, a través de sus talleres, puso al servicio de
nuestros enfermos de Alzheimer la magia del arte culinario.
Una magia capaz de esconder detrás de cada olor, cada
textura y cada sabor, un mundo de recuerdos y emociones,
que les devolvieran retazos de su pasado.
Esta publicación pone fin a esa maravillosa experiencia
terapéutica de la que nos sentimos tan orgullosos. Una
experiencia que confiamos que haya contribuido a devolver
a quienes se olvidaron de vivir, la sonrisa y la ilusión que
proporciona siempre recuperar viejos sueños de la infancia,
la juventud y la madurez.

our School of Hotel Management an opportunity to participate
in an experience that they will remember all their lives.
This was not only an inspiration; professionally speaking,
they gained this experience when sharing workspaces with
the maestro and pastry chef, Paco Torreblanca, who is a role
model of good will and of human quality. Above all, it was
a personal enrichment to participate in this project, which is
profoundly social and a gesture of solidarity.
The judge and the gastronome Brillat Savarin said: “The
pleasure of the table belongs to all ages, to all conditions, to
all countries and to every day, and it is the last thing we have,
after having lost everything else.” I would add to his words
that cooking could also be the last bond with reality, which,
in the case of these patients, has been taken out of their hands
at the rhythmic speed of forgetting.
For this reason, we considered it to be very interesting to
contribute to this project. Through their workshops, they
provided our Alzheimers patients with the magic of the art
of cuisine. Magic, hidden behind every smell, every texture
and every taste, a world of memories and emotions that bring
back fragments from the past.
This publication draws to a close this excellent therapeutic
experience of which we are very proud. It has been an
experience that we believe has helped to restore, to those
who have partially forgotten daily life, the smile and the
happiness that always go hand in hand with recovering
dreams from one's infancy, youth and middle age.

En primer lugar y ante todo, daros las gracias por haber
dejado que participemos de esta experiencia tan constructiva
y gratificante, tanto a nivel personal como profesional, ya
que no todos los días se tiene la posibilidad de poder compartir
los conocimientos que uno mismo ha adquirido a lo largo
de los años con personas tan agradecidas y con una calidad
humana tan grande.
Espero que nuestra pequeña aportación a este libro les haya
servido para descubrir, recordar y disfrutar de esos sabores
que todos tenemos en la memoria, recuerdos de nuestras
madres y abuelas, es algo que nunca debe de caer en el olvido,
lo tradicional y por supuesto lo bueno.
Que sepáis que hemos disfrutado mucho, mucho no, muchí-
simo al lado de todos vosotros haciendo realidad este proyecto,
podéis contar con nosotros para futuras aportaciones ya que
estaremos encantados de poder volver a disfrutar de gente
tan maravillosa como vosotros.

pacientes, grupo médico y organizadoras” ya que los
verdaderos protagonistas sois vosotros, nosotros meros
ayudantes en esta gran labor que desarrolláis a favor de todo

habéis dado tanto a mí como a mi padre de poder trabajar a
vuestro lado ya que ha sido una experiencia maravillosa que
nos ha hecho recordar nuestra infancia y esos postres tan
maravillosos de antes.

en esa labor que hacéis día tras día.

participate in such a constructive and rewarding experience,
both on a personal and professional level. It is not every day
one gets the chance to share one's knowledge, accumulated
throughout the years, with such a grateful group of people
so rich in human warmth.
We hope that our small contribution to this project has helped
to discover, remember and enjoy these tastes we all have in
our memory; memories of our mothers and grandmothers. It
is something that should never be forgotten, the traditional
and, of course, the good.
We want you to know that we have enjoyed very much, no,
not very much but enormously, being next to all of you who
have made this project real. You can count on us for any

Con este taller de Arte y Cultura como Terapia, abrimos el
debate sobre Alzheimer hacia una línea de experimentación
donde el arte culinario, la cocina dulce en particular, se suma
a la investigación científica.
Las sensaciones que conllevan los sabores responden a un
mecanismo muy complejo. En ellas participan a la vez los
sentidos del gusto, del olfato, de la vista, del tacto y del oído.
Pero, además, al efecto de una percepción sensorial completa
se le suman la memoria y la influencia social, cultural e
incluso religiosa. Un dulce puede estimular emociones y
evocar recuerdos de situaciones vividas, sean felices, agradables,
tristes, alegres o, incluso, de enfados. Las memorias pueden
despertar la fragancia de un limón o el ruido al cascar una
nuez.
Dentro de este contexto, el maestro pastelero Paco Torreblanca
evocó recuerdos de encuentros alegres y de buena compañía
ofreciendo a los pacientes dulces como el “sablé bretón” con
cabello de ángel y canela, milhojas de hojaldre, merengue y
canela, bombones de té de flores y panettone. Todos ellos
son dulces que pertenecen a la memoria colectiva, de nuestras
fiestas familiares y celebraciones. En este viaje de recuerdos
del pasado, el paladar de los pacientes bailaba entre sensaciones
de lo dulce, de lo más salado y de lo ácido, mientras escuchaban
el ruido de las galletas y sentían la textura del bizcocho. “¡No
tengan miedo!”, exclamaba el pastelero, “rompan el panettone
con sus manos y coman el trozo que quieran, ¡el panettone
no se corta con un cuchillo!”
En este Taller, que también contó con la participación de
David Torreblanca, la cocina dulce ha ayudado a los pacientes
de Alzheimer a despertar aquellas emociones que les han
llevado a contactar con sus sentimientos, entre sabores
conocidos y nuevas composiciones. Y es que, en palabras de
Paco Torreblanca, el dulce es “el colofón de la comida”:
“Una de las cosas que he aprendido es que la pastelería
tiene que evolucionar. Para ello tenemos que buscar nuevas
formas, experimentar con nuevos productos de cualquier país
del mundo, por supuesto sin olvidarnos de nuestras raíces
gastronómicas.
Suelo decir a quien trabaja a mi lado que los pasteles y
postres son el colofón de la comida, son como joyas que nos
permiten tener un recuerdo inolvidable de los buenos momentos.
Siempre me han definido como un diseñador de postres y
pasteles, pero para mí lo más importante es el sabor por su
gran riqueza y enorme diversidad. Aunque, por supuesto, no
descarto la estética; la estética es el complemento perfecto,

Con este taller de Arte y Cultura como Terapia, abrimos el

Juntos, los Torreblanca y los pacientes, han incorporado a la
repostería de Murcia una nueva receta: la Tarta Murcia.
Este dulce ha sido el colofón a un taller que ha conseguido
sorprender y emocionar por coexistir en él fragancias y
texturas familiares murcianas, a la vez que asombrosas. Es
el fruto de la búsqueda del “dónde venimos” y “adónde
vamos”.
Toda esta experiencia se recoge en el presente libro, cuyas
páginas están impregnadas con los aromas de los ingredientes
de Tarta Murcia para ayudar a recordar su sabor, además de
quedar la receta materializada en papel comestible, impreso
con fragancias de limón y canela.
La edición registra también las recetas de los dulces de los
pacientes que, elaborados con la ayuda de los alumnos de la
Escuela de Hostelería, tienen como objetivo conservar en los
pacientes sus recuerdos del presente, y crear una memoria
futura para sus hijos y nietos.

With this workshop Art and Culture as Therapy, the debate
on Alzheimers is opened up towards experiments within the
research where the art of cuisine, sweet cuisine in particular,
joins the scientific investigation. The sense of taste is extremely
complex. Here receptors of taste, sight, touch, smell and
hearing all participate together. This is a result of a complete
sensorial perception that incorporates the notion of memory
and social, cultural and even religious influences.
Sweet cuisine can stimulate emotions and evoke memories

palates danced between sensations of sweetness, sourness
and bitterness, listening to the sound of the biscuits and feeling
the texture of the sponge cake. “Don't be afraid,” exclaimed
the pastry chef, “break the Panettone with your hands and
eat the piece you like. The Panettone is not cut with a knife!”
In Torreblanca's words, “the dessert is the pinnacle of the

With this workshop Art and Culture as Therapy, the debate
on Alzheimers is opened up towards experiments within the
research where the art of cuisine, sweet cuisine in particular,
joins the scientific investigation. The sense of taste is extremely
complex. Here receptors of taste, sight, touch, smell and
hearing all participate together. This is a result of a complete
sensorial perception that incorporates the notion of memory
and social, cultural and even religious influences.
Sweet cuisine can stimulate emotions and evoke memories

Una de las experiencias más interesantes que he tenido
últimamente ha sido en las Jornadas sobre Terapias no
Farmacológicas en la enfermedad de Alzheimer. Ha sido en
Salamanca, en el Centro de Referencia Estatal (CRE) para esta
enfermedad. En la reunión había expertos del mundo que
expusieron sus trabajos. En ellos abren caminos, utilizando la
vertiente artística, -la literatura, el teatro, la música, etc.- como
medio de expresión para los pacientes con demencia. Son medios
terapéuticos diferentes al del lenguaje y la memoria, los más
afectados en los pacientes con Alzheimer.
Uno de los ponentes era Richard Taylor, estadounidense, doctor
en Psicología, diagnosticado de Alzheimer en el año 2001.
Richard es alto, canoso, de verbo lento, seguro y claro; un
hombre afable, que piensa y escribe a diario, da conferencias
y explica lo que para él supone la enfermedad y “cómo se siente”.
Ha publicado un libro, 'Alzheimer desde dentro', en el que cuenta
que “viviendo con los síntomas de demencia, estoy todavía
aquí, aunque nunca me he ido”. Pide que lo capacitemos, que
lo recapacitemos, pero que no lo incapacitemos. Quiere que su
voz sea oída, que le demos un cuidado social y humanizado
“porque es lo moral”. Afirma que “no podemos depender sólo
de las medicinas, todavía no ha llegado la curación” y que “el
equipo médico nos clasifica como 'gente con demencia' pero
esto es muy limitado. Estamos todos allí/aquí, SIEMPRE”.
Esta extraordinaria experiencia me hizo ver aún más claramente
que estamos en el camino adecuado; que Murcia va a la cabeza
en las investigaciones cualitativas en terapias no farmacoló-
gicas. Con este “dulce trabajo” que aquí presentamos, estamos
“recapacitando” a nuestros pacientes; estamos fijándonos no sólo
en aquellas partes de su cerebro que están afectadas por la
enfermedad (a las que por supuesto tratamos) sino en las que
no lo están, las cuales potenciamos. Cuando a alguien comienza
a fallarle la memoria, le quedan muchas otras memorias, le
quedan las muy ricas conexiones emocionales que nutren todas
nuestras memorias desde que nacemos y que configuran la
enorme riqueza de nuestro cerebro y de nuestro yo, de cada ser
humano.
Decía el pintor y poeta murciano Ramón Gaya del que este
año se conmemora su centenario: “El arte es una cosa carnal”.
Creo que así es, el arte en cualquiera de sus manifestaciones,
y la gastronomía es una de ellas, está en arraigado en lo más
profundo de nuestra naturaleza, se ha hecho genético, es
carnal. Y desde el punto de vista científico les aseguro que
eso está impreso en nuestro cerebro y que es una extraordinaria
herramienta terapéutica como estamos demostrando con
nuestra investigación.

the world attended this meeting and presented a vision of their
work. New paths are opening by using the arts - literature, the
theatre, music etc. - as ways of expression for patients with
dementia. They are different forms of therapy from the ones
based on language and memory that affect Alzheimer's patients
the most.
One of the lecturers was Richard Taylor, an American
psychologist, who holds a PhD. In the year 2001, he was
diagnosed with Alzheimers. Richard is tall, white-haired, slow
speaking, secure and clear; a charming man who thinks about
his illness and keeps a diary, gives lectures and explains his
side of what the illness means and “how it feels”. He has
published a book, Alzheimer's From the Inside Out, where he
recounts, “living with the symptoms of dementia. I am still
here, although I have never gone.” He made a plea for us to
qualify him, that we re-qualify him and never disqualify him.
He wants his voice to be heard, that we provide him with
human and social care “because that is the moral thing to do”.
He affirms that “we cannot depend only on medicine, still the
cure has not arrived” and that “the medical team classifies us
as 'people with dementia' but all this is very limited. We are
there/here, ALWAYS.”
This extraordinary experience made me even more conscious
that we are on the right track; that Murcia is leading the way
in qualitative research in non-pharmacological therapies. With
this “sweet work” that we are introducing here, we are “re-
qualifying” our patients. We are not merely observing the parts
of their brains that are affected by the illness (which of course
we treat) but the parts that are not, and these are what we are
strengthening. When someone starts to lose memory, one is
left with many more memories. One is left with a rich set of
emotional connections that foster all our memories from the
time we are born and that shape the enormous richness in our
brain, and the self-awareness of every human being.
The Murcia artist and poet, Ramón Gaya, whose centenary

El Taller de Arte y Cultura como Terapia contra el alzhéimer,
con Paco Torreblanca,“Tarta Murcia”, se enfoca hacia la
estimulación multisensorial.
Los participantes seleccionados fueron 9 pacientes, de ambos
sexos, que están diagnosticados por la Unidad de Demencias
del Hospital Universitario Virgen de la Arrixaca con un GDS
4. La actividad del Taller contó además con la colaboración
del pastelero, Paco Torreblanca, su hijo David y 18 alumnos
de primer y segundo curso de la Escuela de Hostelería de
Murcia.
El taller (5 sesiones en total, de 90 minutos cada una) tuvo
lugar en el aula de cocina de la Escuela de Hostelería,
dedicándose dos alumnos por cada paciente. Por su conocimiento
en la elaboración de pastelería, los alumnos ayudaron a los
pacientes a fijar los ingredientes de sus dulces y la cantidad
adecuada. Por otro lado, los pacientes trajeron sus propios
delantales de sus casas para ayudarles a asociar el trabajo del
Taller con la cocina y sus tareas.
Todas las sesiones se enfocaron hacia las múltiples sensaciones
que pasan por el cerebro al comer un pequeño dulce: una
Magdalena, Arroz con leche, Pan de Calatrava, un Merengue....
El dulce provoca olores, sabores y texturas que ayudan a evocar
el recuerdo del lugar en el que se elaboró y con quién se disfrutó.
En la sesión inaugural, que fue impartida por Paco Torreblanca
el 16 de febrero de 2010, el célebre pastelero habló de los
sabores gastronómicos del Mediterráneo y especialmente
dentro de la Región de Murcia. Al ofrecer a los pacientes
dulces de gustos diferentes y texturas diversas, les animó a
olerlos (¿a qué huele?), a identificar su color y elaboración
(hecho al horno o crudo), a saborearlos unos momentos en
la boca (identificar el sabor y la textura). Así se fomentó un
amplio lenguaje sobre los recuerdos hacia los postres -
situación y sabores: ¿Cuál era el sabor favorito de un dulce
/postre? ¿Y a qué situación correspondía?: Celebración, con
la familia, un lugar... Al terminar la sesión, eligieron un dulce
para elaborar en la siguiente sesión.
En la segunda sesión, los pacientes, junto con los alumnos
de Hostelería, recordaron la visita de Paco Torreblanca y el
nombre del dulce previamente elegido: Arroz con Leche.
Con la ayuda de los alumnos, los pacientes identificaron los
ingredientes del dulce y la cantidad, además de relacionarlo
con la situación original: durante la elaboración, dónde lo
habían comido y con quién. Entonces, lo prepararon y tomaron
notas de todo el proceso. La jornada concluyó con una alegre
degustación y, a continuación, cada uno de los pacientes
eligió sus dulces favoritos para elaborar al día siguiente:

bizcochos, paparajotes, buñuelos, magdalenas, etc. Cuando
volvieron al tercer encuentro con los alumnos, los ingredientes
de sus dulces estaban preparados en el obrador. Los pacientes
recordaron cuál fue su dulce elegido, y nombraron los
ingredientes mientras elaboraban la receta en colaboración
con los alumnos. Al terminar su trabajo, el dulce fue puesto
encima de una bandeja y los pacientes fueron retratados muy
orgullosos con sus obras de repostería. Después, disfrutaron
probando los dulces de cada uno; oliéndolos, identificando
su color y elaboración, además de su sabor y textura.
Finalmente, se apartó una muestra de cada dulce para que
los probasen los Torreblanca.
David Torreblanca fue el encargado de la siguiente sesión,
cuando los pacientes le describieron las recetas y le ofrecieron
sus dulces para degustar. Cada paciente tuvo cinco minutos
para explicar su postre, y juntos lo analizaron: sus ingredientes
en relación de sabores Mediterráneos. El objetivo consistía
en identificarlos y mantenerlos en la creación de la Tarta
Murcia.
En la quinta y la última sesión, los pacientes elaboraron la
Tarta Murcia en colaboración con David y con los alumnos.
Este dulce iba a ser un encuentro entre los postres elaborados
por los pacientes y la aportación del equipo de Torreblanca.
Así sería un dulce, familiar con un aroma “extraño”. La meta
fue encontrar un sabor del pasado con un pie en el futuro, y
será ofrecido a la sociedad murciana el día de presentación
del Taller.
Un importante mecanismo de registro de todas las sesiones
fue que cada dulce tuviese su hoja de evaluación, donde se
medía el desarrollo del lenguaje y el grado de la emoción,
aparte de que el paciente respondiera a unas preguntas
correspondiente a cada dulce. Además, en cada sesión, el
clínico evaluaba y observaba al paciente en cuestiones de
conducta y estado emocional. Antes del inicio de la
intervención y a la finalización del Taller, se midió el tiempo
de participación y la implicación de los pacientes en el
desarrollo del mismo. Se utilizaron indicadores de medida
mediante seguimiento clínico y cuestionarios de calidad de
vida, nivel de deterioro, nivel emocional, conducta, estado
mental y estado de satisfacción.
Con el fin poder seguir detectando posibles cambios en el
desarrollo de la enfermedad de estos pacientes, todas las
sesiones han sido grabadas en vídeo con sonido y fotografiadas,

volvieron al tercer encuentro con los alumnos, los ingredientes
de sus dulces estaban preparados en el obrador. Los pacientes
recordaron cuál fue su dulce elegido, y nombraron los
ingredientes mientras elaboraban la receta en colaboración
con los alumnos. Al terminar su trabajo, el dulce fue puesto
encima de una bandeja y los pacientes fueron retratados muy
orgullosos con sus obras de repostería. Después, disfrutaron
probando los dulces de cada uno; oliéndolos, identificando
su color y elaboración, además de su sabor y textura.
Finalmente, se apartó una muestra de cada dulce para que
los probasen los Torreblanca.
David Torreblanca fue el encargado de la siguiente sesión,
cuando los pacientes le describieron las recetas y le ofrecieron
sus dulces para degustar. Cada paciente tuvo cinco minutos
para explicar su postre, y juntos lo analizaron: sus ingredientes
en relación de sabores Mediterráneos. El objetivo consistía
en identificarlos y mantenerlos en la creación de la Tarta
Murcia.
En la quinta y la última sesión, los pacientes elaboraron la
Tarta Murcia en colaboración con David y con los alumnos.
Este dulce iba a ser un encuentro entre los postres elaborados
por los pacientes y la aportación del equipo de Torreblanca.
Así sería un dulce, familiar con un aroma “extraño”. La meta
fue encontrar un sabor del pasado con un pie en el futuro, y
será ofrecido a la sociedad murciana el día de presentación
del Taller.
Un importante mecanismo de registro de todas las sesiones
fue que cada dulce tuviese su hoja de evaluación, donde se
medía el desarrollo del lenguaje y el grado de la emoción,
aparte de que el paciente respondiera a unas preguntas
correspondiente a cada dulce. Además, en cada sesión, el
clínico evaluaba y observaba al paciente en cuestiones de
conducta y estado emocional. Antes del inicio de la
intervención y a la finalización del Taller, se midió el tiempo
de participación y la implicación de los pacientes en el
desarrollo del mismo. Se utilizaron indicadores de medida
mediante seguimiento clínico y cuestionarios de calidad de
vida, nivel de deterioro, nivel emocional, conducta, estado
mental y estado de satisfacción.
Con el fin poder seguir detectando posibles cambios en el
desarrollo de la enfermedad de estos pacientes, todas las
sesiones han sido grabadas en vídeo con sonido y fotografiadas,
permitiéndonos así medir y comparar cambios de expresión
del lenguaje y emoción a lo largo del tiempo establecido en
la investigación.

The Workshop Art and Culture as Therapy against Alzheimers,
with Paco Torreblanca, “Tarta Murcia” focuses on multisensory
stimulation.The participants consisted of 9 Alzheimers patients
of both sexes who had been diagnosed with GDS 4 and were
under treatment at the Dementia Unit at the University Hospital
Virgen de la Arrixaca in Murcia. This activity also relied on
the collaboration of the pastry chef, Paco Torreoblanca, his
son David and 18 first and second year students at the Hotel
Management School in Murcia.
The workshop took place over five 90 minutes sessions, in
the kitchen classroom at the school and each patient was
accompanied by two students. Because of their knowledge in
baking and making desserts, the students' role was to help the
patients to identify the ingredients of the desserts and their
required quantities. The patients brought their own aprons
from their homes to help them to associate the assignment at
the workshop with the kitchen and its tasks.
All the sessions focused on the many sensations that pass
through the brain at the moment of eating a small cake or
dessert: a muffin, Rice pudding, Calatrava Bread Pudding,
Meringue etc. A dessert stimulates smells, tastes and textures
that together evoke memories of the place in which it was
prepared and with whom it was enjoyed.
At the opening session, given by Paco Torreblanca on 16th of
February 2010, the celebrated pastry chef talked about the
gastronomic tastes of the Mediterranean and, in particular, of
the Murcia Region. Offering the patients desserts of different
tastes and diverse textures, he encouraged them to sense their
fragrance (what does it smell of?), identify their colours and
preparation (is it cooked, done in an oven or eaten raw?) and
to savour them for a few moments in the mouth (identify the
taste and the texture). They served as an inspiration for a broad
conversation about memories related to desserts - situations
and tastes: What was the taste of their most favourite dessert?
What situation did it recall: a celebration, a family gathering
or a place? At the end of this session, they chose a dessert to
prepare in the following session.
In the second session, the patients, together with the students,
made an effort to remember Paco Torreblanca's visit and the
name of the dessert already chosen: Rice Pudding. Directed
by the students, the patients identified the ingredients needed
for the dessert and their quantities, and also relating it to the
original situation of its preparation: where and with whom.
Subsequently, they prepared the rice pudding and made notes
of the process. The working day finished with a happy tasting
session, followed by the patients choosing their favourite

them and use them in the creation of Murcia Tart.
In the fifth and the last session, the patients prepared Murcia
Tart in collaboration with David and the students. This tart
was meant to be a meeting point between the well-known
desserts prepared by the patients and the contribution of
Torreblanca's team. In that way, the dessert would be familiar
with a slightly “strange” aroma. The goal was to find a taste
from the past with one foot in the future and offer this taste to
the society of Murcia on the day of the presentation of the
Workshop.
As a way to register the workshop, each dessert had its evaluation
form that was used to record the degree of emotion and the
use of language. In addition, each patient was asked a set of
questions corresponding to each dessert. Moreover, all the
patients were evaluated and observed in each session in the
context of clinical issues such as behaviour and emotional state.
Before the initiation of the intervention and at the end of the
workshop, the degree of participation and the patient's interest
during the process of the workshop was measured. Measurement
was based upon clinical reports and questionnaires about the
quality of life, degree of deterioration, emotional level, behaviour,
mental state and the degree of satisfaction.
In order to continue to observe possible changes experience, or
the development of the disease suffered by these patients, all
the sessions were audio-video recorded, and being photographed.
It will thus be possible to measure and compare facts throughout
the investigation, the facts on verbal expression and on emotion.

David Torreblanca was in charge of the next session. That day
the patients were asked to describe to him the recipes and give
him samples to taste. Each patient had five minutes to describe
his/her dessert and together they analysed the ingredients in
relation to the Mediterranean flavours. The aim was to identify
them and use them in the creation of Murcia Tart.
In the fifth and the last session, the patients prepared Murcia
Tart in collaboration with David and the students. This tart
was meant to be a meeting point between the well-known
desserts prepared by the patients and the contribution of
Torreblanca's team. In that way, the dessert would be familiar
with a slightly “strange” aroma. The goal was to find a taste
from the past with one foot in the future and offer this taste to
the society of Murcia on the day of the presentation of the
Workshop.
As a way to register the workshop, each dessert had its evaluation
form that was used to record the degree of emotion and the
use of language. In addition, each patient was asked a set of
questions corresponding to each dessert. Moreover, all the
patients were evaluated and observed in each session in the
context of clinical issues such as behaviour and emotional state.
Before the initiation of the intervention and at the end of the
workshop, the degree of participation and the patient's interest
during the process of the workshop was measured. Measurement
was based upon clinical reports and questionnaires about the
quality of life, degree of deterioration, emotional level, behaviour,
mental state and the degree of satisfaction.
In order to continue to observe possible changes experience, or
the development of the disease suffered by these patients, all
the sessions were audio-video recorded, and being photographed.
It will thus be possible to measure and compare facts throughout
the investigation, the facts on verbal expression and on emotion.

Los participantes tuvieron el placer de asistir al tercer taller
de Arte como Terapia, que esta vez se desarrolló en la Escuela
de Hostelería.
Todos eran pacientes de la Unidad de Demencias del Hospital
Virgen de la Arrixaca, diagnosticados de Enfermedad de
Alzheimer GDS 4.
En la primera sesión acudió el famoso pastelero Paco
Torreblanca, que le hizo probar a los pacientes diferentes
sabores hechos al más puro estilo tradicional, como merengues
de diferentes tipos. Los dulces tuvieron el papel de despertar
recuerdos pasados en los miembros del grupo. Los pacientes
se situaron junto con sus familiares en frente del pastelero
para poder observar la elaboración de los dulces. Durante la
elaboración, Paco Torreblanca comentaba cada uno de los
ingredientes que iba utilizando. Pacientes y familiares
cambiaban impresiones sobre los recuerdos asociados a esos
olores y sabores. A unos les despertó el recuerdo de los
dulces de la infancia, IPG evocó los olores de la panadería
que regentaba y APC mantuvo una buena conversación con
Paco Torreblanca sobre el cabello de ángel, de la temperatura
a la que se hacía. Este señor tenía una fábrica de conservas
vegetales y sabía la maquinaria necesaria para elaborarlo,
los grados de cocción y todo lo relacionado con el tema.
La segunda sesión transcurrió en el obrador de la Escuela
de Hostelería de Murcia. Cada uno de los pacientes iba
acompañado por dos alumnos de la escuela que le ayudarían
a elaborar los dulces tradicionales, sirviendo estos como
apoyo de su memoria. Nosotras nos limitamos a ser simples
observadoras que registrábamos el comportamiento, nivel
atencional y la reacción emocional a través de una hoja de
registro que incluye ítems de escalas que miden dichos
constructos. El dulce de elección para la mayoría fue el arroz
con leche. Aunque la mayoría no recordaba la receta y omitían
ingredientes o simplemente no lo habían hecho nunca, como
era el caso de los hombres. DRH prefirió hacer su propia
receta de buñuelos de zanahoria, y la verdad es que estaban
riquísimos. Los pacientes se manejaron bastante bien con
los utensilios, les ayudaron a remover el arroz para que no
se pegara y las mujeres, que fueron las que más lo disfrutaron,
dieron su toque personal al arroz con leche. Durante la sesión
no se observaron problemas de conducta. En general todos
estuvieron atentos al proceso, motivados durante la
elaboración y manifestaban alegría al final de la sesión.
En la tercera sesión, la estructura que se siguió fue la misma
que en la sesión anterior. Cada uno de los pacientes eligió
hacer su propio postre o dulce favorito, y en el caso de los

por un bizcocho sin chocolate. Como hemos dicho antes, los
hombres se limitaron a ayudar en la preparación de los dulces,
echando los ingredientes, moviendo la masa... mientras que
ICG hizo su propio bizcocho tal y como lo sigue haciendo
en casa. Alguno se quedó pegado, pero en general todos
estaban realmente buenos. MBP hizo galletas rellenas, receta
que siempre a hecho y que le gusta mucho a su familia,
explicándonos cómo se elaboraban. IPG elaboró Pan de
Calatrava, aunque los alumnos debían ir ayudándole en los
ingredientes y la elaboración del dulce, pues no recordaba
que llevaba ni como se hacía. Los alumnos de PAP elaboraron
con él unas ricas magdalenas de chocolate. En todo momento,
le pedían que les ayudara a echar los ingredientes y les iban
explicando cómo se iba haciendo. DRH elaboró unos
riquísimos paparajotes, un postre típico murciano, que se
realiza con las hojas del limón. Fue echándole los ingredientes
que tenía y además todo lo que veía encima de la mesa. Y
por último, JMG nos demostró cómo se hacen unos ricos y
caseros buñuelos, desayuno que preparaba a sus hijos todos
los domingos antes de misa.
Probamos todos los postres, aunque guardamos algunos
trozos de cada uno para la siguiente visita, que sería la visita
de la degustación. En esta ocasión tampoco se observaron
problemas de conducta. El nivel atencional si sufrió un
descenso en algunos de los participantes en los que el
cansancio hizo mella. Las emociones fueron positivas al
final de la sesión.
En la siguiente sesión (la cuarta) tuvimos el placer de contar
con el hijo mayor de Paco Torreblanca, David. Fue probando
uno a uno todos los dulces elaborados por los pacientes y
alumnos. La mayoría de ellos estaban hechos con ingredientes
propios de la zona, limón, bizcocho...
Los pacientes, uno a uno, le iba explicando a David cómo
lo había elaborado, qué ingredientes llevaba... alguno necesitó
la ayuda de los alumnos para poder explicarlo mejor y contar
anécdotas de su vida unidas a los recuerdos de ese postre.
Después de esto, David se llevó un poquito de cada dulce
para que él, junto con su equipo, elaborara una tarta de
Murcia, que englobara todos los sabores que los pacientes
habían recuperado.
No se observaron problemas conductuales. Mostraron atención
durante toda la sesión y manifestaron emociones positivas
en general.

En la última sesión volvimos al obrador de la Escuela de
Hostelería. David Torreblanca elaboró la Tarta Murcia
ayudado por los pacientes del taller. Pretendíamos que todos
y cada uno ayudará en su elaboración para ser participes del
resultado final. La idea del diseño y los ingredientes se
prepararon a priori por las limitaciones de tiempo.
Entre todos fueron rellenándola, unos repartían la crema de
limón, otros iban cortando la fruta que decoraría la tarta...
así hasta dejarla lista. Y voilá, ya estaba hecha la famosa
Tarta Murcia.
En esta sesión sí se observaron diferencias entre los sujetos.
En general las mujeres se mostraron más motivadas y parti-
cipativas. También se observaron problemas conductuales
en algunos pacientes con una capacidad de atención sostenida
más deficitaria, en los que aparecieron comportamientos
anómalos y repetitivos como quitarse el delantal una y otra
vez durante la sesión y buscarlo después. A nivel emocional
las respuestas siempre fueron positivas.
En general este taller ha sido muy positivo, por la alegría
con la que acudían, por el interés mostrado ante el contenido
de las sesiones y la gran motivación con la que participaron
en cada una de ellas. Aunque todos estaban diagnosticados
de Enfermedad de Alzheimer con GDS 4, aquellos pacientes
cuyas capacidades funcionales eran más deficitarias requi-
rieron más ayudas por parte de los alumnos de hostelería,
fueron menos participativos y mostraron menos iniciativa
que aquellos más independientes en las actividades de la
vida diaria.

Our participants had the pleasure of assisting the third workshop
Art and Culture as Therapy that took place in the School of
Hotel Management in Murcia. They were all patients at the
Dementia Unit at the Hospital Virgen de la Arrixaca and
diagnosed with Alzheimer's with GDS 4.
The famous pastry chef, Paco Torreblanca opened the first
session. He offered the patients to try different flavours and
used genuine and traditional methods in their preparation, such
as in meringues of different kinds. For the group members,
these played a role in evoking memories of the past. The
patients sat close to their family members in the front row to
follow closely how the pastry chef prepared the desserts.
During the process, Paco Torreblanca commented on every
ingredient he was using and the patients and family members
responded with memories associated with the fragrance and
flavours. Some remembered cakes and desserts from their
childhood: IPG remembered the bakery she had run and APC
carried out a conversation with Paco Torreblanca about Angel
Hair Squash and about its required temperature when making
it. This patient had run a factory producing tinned vegetable
and knew the necessary mechanisms to make it, cooking times
and other related details.
The second session was carried out in the kitchen classroom
at the school. Two students accompanied each patient, they
would help the patient to make on a traditional dessert and
support their memory skills. We limited ourselves to be mere
observers who registered the pattern of behaviour, level of
attention and emotional reaction. All the information was
noted on an evaluation form that includes scale items that
measure already mentioned factors. Most of the patients chose
rice pudding, although the majority did not remember the
recipe, left out ingredients or simply had never made it, as in
the case of the male participants. DRH preferred to do her
own recipe of carrot doughnuts and the truth is, they turned
out to be delicious. The patients used the kitchen utensils quite
well. They helped to stir the rice to prevent it burning. The
women were the ones who really enjoyed the situation and
they gave the rice pudding a personal touch. During the session
we did not observe any behavioural problems. In general,
everyone was attentive during the process, motivated by the
work and expressed happiness at the end of the day.
The third session followed the same structure as the previous
one. Each patient chose to do his/her favourite dessert. In the
case of the men, they allowed themselves to be guided, to a
certain extent, by the students. ESR made a chocolate sponge
cake, which her daughter and grandchildren really liked, while

often does and all her family likes the biscuits very much. She
explained its process well. IPG made Calatrava bread pudding.
Here, the students had to help with the identification of the
ingredients and in the preparation of the dessert. She neither
remembered the ingredients nor how to make it. PAP's students
made wonderful muffins with him. At every stage of the
process, they asked for his help to add the ingredients.
Meanwhile, they explained the different stages of making the
muffins. DRH prepared some excellent “paparajotes”, a typical
dessert from Murcia made of lemon leaves. She put all the
ingredients needed, as well as those she saw on the table.
Finally, JMG showed us how to make some delicious
homemade doughnuts. It was a breakfast that she used to
prepare for her children every Sunday before going to church.
We tried all the desserts. We also kept a piece of each dessert
for the following session, which was when the tasting would
take place. During this session, no behavioural problems were
observed. For some participants, the level of attention dropped,
especially for those who had become very tired. Emotions
were positive at the end of the session.
In the following session (the fourth), we had the pleasure of
collaborating with Paco Torreblanca's older son, David. He
tried the desserts, one by one, which had been previously
made by the patients and the students. The majority had been
made with ingredients from the region: lemon sponge cake,
etc.
The patients explained in turn to David how they had made
the cakes, which ingredients they had used, etc. Some of them
needed assistance from the students to explain the process
better and to tell anecdotes that related to the desserts. Later,
David took a piece of the desserts with him. With his team at
their bakery, Totel, he was to conceive Murcia Tart that would
include all the flavours that the patients had recovered.
No behavioural problems were observed. They kept their
attention during the whole session and, generally, expressed
positive emotions.

La palabra 'arte' tiene un extenso significado, pudiendo
designar cualquier actividad humana hecha con esmero y
dedicación, o cualquier conjunto de reglas necesarias para
desarrollar de forma óptima una actividad: se habla así de
“arte culinario” a la forma creativa de preparar los alimentos,
que depende de la cultura y costumbres de cada región. En
el taller de hostería este arte se ha empleado con un fin especial
de trabajar la memoria mediante los sabores culinarios, sabores
que nos llevan a recuerdos del pasado, relacionados con
nuestras experiencias personales. Así lo han afirmado los
familiares de los pacientes que han participado en dicho taller.
En las encuestas administradas a los familiares, la mayoría
califican el taller de original, innovador, excelente, obte-
niéndose en términos generales una valoración muy positiva.
Dentro de los aspectos del programa que más le podían llamar
la atención o agradar, fueron sobretodo la participación activa
de los pacientes a la hora de realizar las recetas, su implicación
en los talleres, plantean que no fueron tratados como meros
observadores, sino como miembros del taller, realizando un
trabajo conjunto.
La presencia de Torreblanca fue muy grata para todos,
apreciaron su actitud sencilla y amable y su trato, paciente
y profesional, que adoptó en todo momento.
Muchas de las profesiones y actividades que los pacientes en
sus anteriores vidas habían desempeñado; cocineros, ama de
casa, panaderos, hacían que durante el taller culinario se
activase de una forma más fluida su memoria autobiográfica,
junto con otras emociones y actitudes asociadas como son la
nostalgia, la alegría y la capacidad de auto-superación.
Los familiares afirman una mejoría en el estado de ánimo del

The word “art” has a wide meaning. It can be attributed to any
human activity made with care and dedication, or any set of rules
necessary to develop an activity in the best possible way. Within
this context, one can talk about the “art of cuisine”, the creativity
in preparing food that depends on each region's culture and customs.
In the present workshop on confectionary, this art form has been
used with the intention to work with memory through gastronomic
tastes; tastes that bring back memories of lived events. This is how
the patients' families, participating in the workshop, recount the
experience.
The families were given a questionnaire in which the majority
assessed the workshop as “original”, “innovative”, “excellent”,
and thus, it obtained a very positive assessment. In terms of the
programme, what caught their attention the most and with enormous
satisfaction, was, above all, the active participation of the patients
when they were asked to carry out the recipes and their engagement
in the activities. This demonstrated that they were not treated as
mere onlookers but as active members of the team performing the
different skills in the preparation of desserts.
Everyone found Torreblanca's presence very pleasant. They
appreciated his ever easy and friendly attitude and responses,
showing both patience and professionalism.
Many of the jobs and occupations that the patients had fulfilled in
the past - as chefs, housewives and bakers - proved to have a
stimulating effect and evoked many autobiographical memories.
They were brought to the surface in a spontaneous way, together
with other feelings and attitudes like nostalgia, happiness and the
ability to surpass oneself.
The families recognised an improvement in the patient's state of
mood during and after the workshop. When asked if they wanted
to change anything, they did not suggest any constructive criticism
or ideas for improvement, except to express a desire that the
workshop could have spanned a longer period of time.
Finally, we would like to congratulate the family members for
their interest and participation during the course of the workshop.
We do recognise and admire their patience and involvement in
caring for the patient who follows a multidisciplinary treatment
in our unit.

Durante los meses de febrero y marzo, en nuestro instituto se ha
realizado un taller de repostería. Esto dicho así no parece nada
especial; ya que en él se importen enseñanzas de Formación
Profesional de Grado Medio de Panadería, Repostería y Confitería.
El porqué de esta noticia es debido a que un grupo de alumnos de
primer y segundo curso de dicho Ciclo de F.P. han colaborado
muy estrechamente con la Fundación AlzheimUr y a las órdenes
de Francisco Torreblanca (pastelero reconocido a nivel mundial).
Aunque los grandes protagonistas de esta historia sin duda han
sido los enfermos, pacientes con una gran experiencia, que poco
a poco van entrando en esta enfermedad del siglo XXI. El propósito
del taller es recordar a través de los sentidos sabores, olores, colores,
texturas pero sobre todo vivencias pasadas. Creo que han dado un
pasito adelante en sus recuerdos. Como FSV, uno de los pacientes,
que se emocionaba cuando recordaba a su madre mandándolo a
comprar azúcar para hacer un bizcocho.
Por parte de nuestros alumnos la satisfacción de haber ayudado
a un grupo de personas y a sus familiares (también en el proyecto
de la Fundación AlzheimUr). Pero sobre todo les ha valido a ellos
mismos a reconocer una enfermedad y saber cómo reaccionar ante
ella, con cariño y paciencia.
Este taller se desarrolló en cinco sesiones. Para la inauguración el
pasado 16 de febrero se produjo un gran despliegue mediático
(salimos en el telediario). ¡Cómo no! Vino Francisco Torreblanca
el pastelero que hizo la tarta a los Príncipes de Asturias para su
boda. También nos visitó el Señor Consejero de Educación,
Constantino Sotoca Carrascosa, y la Señora Consejera de Sanidad,
María Ángeles Palacios Sánchez. Menuda se monto, había más
cámaras que en la final del Mundial de fútbol.
Las siguientes sesiones fueron más familiares y productivas, mano
a mano alumnos puestos a disposición de los enfermos de Alzheimer.
¡Menudo grupo! Si nos descuidamos tenemos que poner un obrador
para todo el año, que si bizcochos, paparajotes, buñuelos, rosquillas,
arroz con leche y unos deliciosos panes de calatrava, esto no parecía
un taller parecía una fabrica. Lo mejor de todo es que se lo pasaron
muy bien y recordaron muchas cosas. No sólo los enfermos los
alumnos eran otros, algunos incluso con gestos y maneras nunca
vistos por los profesores. Claro está que “todos tienen un positivo”,
aunque la satisfacción personal es la mejor puntuación.
El próximo 21 de septiembre en el Casino de Murcia se presentará
y expondrá un libro realizado a partir de este taller.
Para despedirnos agradecer a todas las personas implicadas por
hacer posible esta experiencia que ha sido interesante y enriquecedora.

During the months of February and March, a cake workshop
took place at our high school. Said in this way, it sounds
nothing special. In our premises, we teach courses in bread-
and pastry making as well as in making cakes, all to become
qualified professionals.
The reason for this announcement is due to the fact that a
group of first and second year students, from the above-
mentioned courses, has collaborated closely with the
AlzheimUr Foundation and followed the instructions of
Francisco Torreblanca (the worldwide famous pastry chef).
However, the main characters of this story are without a
doubt a group of Alzheimers patients. They are patients
with great experience, gradually entering the XXI century
accompanied by this illness. The aim of the workshop is to
use the senses to remember tastes, smells, colours and
textures, but above all, lived experiences. I believe they
have recovered some of their memories. An example would
be when the patient, FSV, was moved by the memory of
his mother asking him to buy some sugar for the sponge
cake.
In terms of our students, they have shown a great satisfaction
for having helped this group of patients and their families
(also part of the project). But, primarily, this collaboration
has been useful for them to recognise the illness and to
know how to confront it, with care and patience.
This workshop was constructed by five sessions. At the
inauguration, the 16th of February, there was an enormous
media display (we were on television). What else could it
be! The pastry chef, Francisco Torreblanca, came. What
else! He had created the wedding cake for Prince and
Princess of Asturias. In addition, Constantino Sotoca
Carrascosa, Education Councillor and María Ángeles
Palacios Sánchez, Health Councillor visited us.
What a situation, there were more cameras than at the World
Cup in football.
The following sessions were much more familiar and more
productive, the students being wholly at the patients'
disposition. What a group! If we would not be on guard,
we would keep the oven working all the year around: there
were sponge cakes, “paparajotes”, fritters, small doughnuts,
rice puddings, but also a delicious Calatrava Bread Pudding.
This did not seem a workshop, much more a bakery. The
best thing was they greatly enjoyed themselves and
remembered many things. This was the case not merely
with the patients. The students were other actors, some of
them making gestures and behaving until then unknown to

Aunque no es un fenómeno exclusivo de nuestro tiempo, es
cierto que no todas las culturas, ni dentro de ellas todas las
personas, abordan de igual manera los conflictos, ni admiten
o rechazan del mismo modo las situaciones difíciles y adversas.
No obstante, la mayor parte de las formas de enfrentarnos a
situaciones de este tipo están cubiertas de emociones negativas,
siendo una de ellas la resignación. Con la resignación tratamos
de aceptar, unas veces, que nos hemos equivocado, otras,
simplemente que la vida está siendo dura y que nada podemos
hacer. Cuando esta emoción nos embarga, cualquier esfuerzo
para mejorar la situación parece inútil y absurdo (Milne, 2001).
Sin lugar a dudas, no es este el camino recorrido por los par-
ticipantes de este extraordinario trabajo en ninguno de sus
tramos.
Más allá del cuidado de necesidades básicas y de la
mejora de la calidad de vida, los primeros suficientes, los
segundos necesarios, aquí se han ido trabajando, a lo largo
de los distintos talleres, aspectos hasta ahora no contemplados.
Desde que nacemos, las personas vamos construyendo nuestra
identidad a través de la interacción con los demás; se trata de
un proceso continuo a lo largo de toda nuestra vida. Es habitual
que las personas diagnosticadas de Alzheimer, o de cualquier
otra enfermedad mental o física, experimenten cómo su
entorno de amistades o de relaciones afectivas se vaya redu-
ciendo, interrumpiéndose el proceso vital anterior. Gracias
a estos talleres, los pacientes han podido seguir trabajando
en el desarrollo de su identidad, tan rota y distorsionada
durante el proceso de esta enfermedad. Principalmente, a
través de los grupos de pertenencia de su entorno familiar y
social, pero también a través de otros grupos con los que se
han podido relacionar y que han sido proporcionados por el
equipo directivo de este trabajo.
Por segunda vez, uno de estos grupos ha estado
formado por jóvenes, en esta ocasión de la Escuela de
Hostelería de Murcia. La actitud de la sociedad hacia la
juventud y la adolescencia ha ido variando con el tiempo,
aunque, en general, esta etapa de la vida se ha considerado
como caracterizada por una limitada capacidad de decisión
y una dependencia con respecto a los padres. Sin embargo,
hoy en día la juventud y la adolescencia se caracterizan más
por su gran protagonismo y poder, jugando los jóvenes un
importante papel como actores sociales, prueba de ello es la
labor que han realizado los voluntarios de este taller. Llevamos
años escuchando que los valores están en crisis y se enfatiza
la urgente necesidad de renovarlos, para poder garantizar una
sociedad más racional y humana. Solidaridad, tolerancia,

Aunque no es un fenómeno exclusivo de nuestro tiempo, es
cierto que no todas las culturas, ni dentro de ellas todas las
personas, abordan de igual manera los conflictos, ni admiten
o rechazan del mismo modo las situaciones difíciles y adversas.
No obstante, la mayor parte de las formas de enfrentarnos a
situaciones de este tipo están cubiertas de emociones negativas,
siendo una de ellas la resignación. Con la resignación tratamos
de aceptar, unas veces, que nos hemos equivocado, otras,
simplemente que la vida está siendo dura y que nada podemos
hacer. Cuando esta emoción nos embarga, cualquier esfuerzo
para mejorar la situación parece inútil y absurdo (Milne, 2001).
Sin lugar a dudas, no es este el camino recorrido por los par-
ticipantes de este extraordinario trabajo en ninguno de sus
tramos.
Más allá del cuidado de necesidades básicas y de la
mejora de la calidad de vida, los primeros suficientes, los
segundos necesarios, aquí se han ido trabajando, a lo largo
de los distintos talleres, aspectos hasta ahora no contemplados.
Desde que nacemos, las personas vamos construyendo nuestra
identidad a través de la interacción con los demás; se trata de
un proceso continuo a lo largo de toda nuestra vida. Es habitual
que las personas diagnosticadas de Alzheimer, o de cualquier
otra enfermedad mental o física, experimenten cómo su
entorno de amistades o de relaciones afectivas se vaya redu-
ciendo, interrumpiéndose el proceso vital anterior. Gracias
a estos talleres, los pacientes han podido seguir trabajando
en el desarrollo de su identidad, tan rota y distorsionada
durante el proceso de esta enfermedad. Principalmente, a
través de los grupos de pertenencia de su entorno familiar y
social, pero también a través de otros grupos con los que se
han podido relacionar y que han sido proporcionados por el
equipo directivo de este trabajo.
Por segunda vez, uno de estos grupos ha estado
formado por jóvenes, en esta ocasión de la Escuela de
Hostelería de Murcia. La actitud de la sociedad hacia la
juventud y la adolescencia ha ido variando con el tiempo,
aunque, en general, esta etapa de la vida se ha considerado
como caracterizada por una limitada capacidad de decisión
y una dependencia con respecto a los padres. Sin embargo,
hoy en día la juventud y la adolescencia se caracterizan más
por su gran protagonismo y poder, jugando los jóvenes un
importante papel como actores sociales, prueba de ello es la
labor que han realizado los voluntarios de este taller. Llevamos

Although not exclusively a phenomenon specific to our age,
it is clear that not all cultures or people within them deal
equally with conflicts. Nor do they, likewise, admit or reject
difficult and unfavourable situations. Most often, however,
the way to meet these kinds of situations are through negative
emotions, one of which is being resignation. By resigning
we try to accept on some occasion that we have made mistakes.
At other times, we simply consider life being tough and we
cannot do anything about it. When this feeling takes over,
any effort to improve the situation seems useless and absurd
(Milne, 2001). This is certainly not the path taken by the
participants of this extraordinary project.
Going beyond caring for basic needs and improving the
quality of life, (the first sufficient and the second necessary),
aspects that have up to now not been much studied have
been worked on during different workshops. From the time
they are born, individuals build up their identity by interacting
with others. It is a continuous process that lasts throughout
our lives. It is common for people diagnosed with Alzheimers,
or with any other mental or physical illness, to experience
how their environment of friends and loving relationships
become weaker and their former way of living interrupted.
Thanks to these workshops, Art and Culture as Therapy, the
patients have been able to continue to develop their identity,
which had broken and become distorted during the process
of the illness. The way this was carried out was mainly
through reference groups, in their familiar and social
surroundings, and also through other groups they have been
able to interact with that were provided with by the team of
directors of the project.
For the second time, young people have formed one of these
groups, this time they were from the Hotel Management
School in Murcia. In society, the attitude towards the youth
and adolescence has varied throughout the ages. In general,
this period of life has been considered to be characterised
by a limited ability to make decisions and dependence upon
their parents. Nowadays, however, the youth and adolescence
have reached a point of great prominence and power, playing
an important part as social actors. The efforts they have made,
as volunteers in the workshop, are a proof of this. For years
we have been hearing that value-systems are in crisis and
that there is an urgent need to renovate to secure a more
rational and humane society. Solidarity, tolerance, respon-
sibility, etc, must strive against indifference and political
apathy, privacy and hedonism. However, these youngsters
demonstrate many of the social and personal values that are

able to understand the patient. It simply has been a matter
of knowing how to listen, remain calm facing with an
inevitable final and above all, to feel the strength of the
human being. Among their main reflections after participating
in the workshop, the majority of these young people drew
out the hotchpotch of generations, of dealing with people of
different ages, other realities and almost from another world.
Additionally, they emphasise as a value, the importance of
the family, above all during the bad moments, and its basic
role within the illness.
Once again doors open to new experiences, motivations to

it could sound surprising, they furthermore obtained the
